Other health related things:
(Most importantly, any health issues I’m experiencing that could be autoimmune or at least affected by inflammation in my body, are important as markers, because if these things are getting better it could be a sign that the MS is getting better.)
Still having about one migraine a month. Annoying, but not the end of the world.
What I am eating/cooking:
We’re about halfway through this elimination diet (yay! We start putting foods back in mid-June) so I’m feeling like there’s an end in sight. 🙂
A few new favorite recipes this month!
I went out with some friends and the restaurant had a brussel sprout and bacon recipe. I didn’t have any, but it inspired me, so I came home and found this recipe. I use turkey bacon which I cook in the oven, and I don’t cook the sprouts as long as the recipe says, but I’ve made this several times already!
I made this lemon custard (coconut milk & eggs) for Mom’s birthday and served it with raspberries. She liked it! It was really yummy, if I do say so myself. 😉
Lastly, I know that banana “ice cream” recipes have been around for a while, but I hadn’t tried it until recently. I actually do this as about 2 cups of berries (I think: I don’t measure it) to one banana.
I’m up to 102 types of edible plants eaten since 12/12/20 (up from 94 last month). I discovered cassava chips, and those are good, but my current favorite snack food is sweet potato chips. 🙂
Things I’m proud of:
I used to use ScriptureTyper.com (now BibleMemory.com) quite a lot for scripture memorization, but I had gotten out of the habit. But I recently picked it back up again! Still trying to re-memorize a lot of the verses I had memorized before, but they’re coming back to me surprisingly fast. 🙂 If you’re interested in memorizing Bible verses, you should give it a try! There’s an app too, and with the app there are more options, like recording yourself speaking the verses so you can listen to them and say them along with yourself. I made a group too, so if you want to join us, you can!

I have practiced the ukulele a bit this month. 🙂
Tennis lessons are done for the foreseeable future. I decided I wasn’t getting as much out of them lately and I needed a break and to practice more.
What I read/am reading this month:
The Omnivore’s Dilemma: A Natural History of Four Meals by Michael Pollan – I was mostly reading this because it seemed like one of those books I *should* read (I’m interested in the topic, just thought I wouldn’t get much out of it because I’m so familiar with it already), but I got more out of it than I expected. I told my mom that I was even getting convinced to help her in the garden more, after reading about how much fossil fuel it takes to package kale into a box or bag and then ship it around the country! There are several topics covered in this book, plus some interesting history about the organic movement, and information about hunting/gathering. You should read it.
The Righteous Mind: Why Good People Are Divided by Politics and Religion by Jonathan Haidt – I actually finished this on March 1 but forgot to include it until now. READ THIS BOOK!!! Such a good perspective on how we think. Just an example: If we want to believe something, we think “can I believe this?” but if we don’t want to believe it, we think “do I have to believe this?” Therefore the amount of evidence we need in those two situations is quite different.

I stand by the fact that it’s easier to walk when it’s sunny, but I was actually working on it last month. 🙂 The Fitbit app lets you know after you’ve reached your step goal (whatever that is, doesn’t have to be 10,000) for 3 or 4 days in a row, and starts telling you you’re on a streak and giving you a different little picture every day (they start recycling the photos after about a week though!) So that was motivating. I had my goal set as 7,000 steps per day, and then increased it to 7,500, and now it’s at 8,000. I broke my streak, but we have a group on Stridekick (let me know if you wanna join!) and our goal was to get 5,000 steps/day, so I was at least been getting that 🙂 (except then I broke my streak there too! But I was sick. Feeling better now though 🙂 ).
